Advent day 20

Christmas is a busy time with lots of wrapping and decorating...and baking. As standard now I make my own bread sauce and cranberry sauce. And today I'm going to share the recipes with you. Bread Sauce Dad makes the most amazing bread sauce ever. I asked him how to make it, as I'd forgotten to buy any. 3 slices bread, including crusts. Tear into small pieces then make into breadcrumbs. (I use a tiny food mixer - it's actually hubby's coffee grinder. He had to buy a new one lol.) Place into a saucepan with some onion salt. Add mik. Bring to boil. Simmer gently for 2-3 minutes. I looked at him. "How much milk?" He grinned. "You'll know." Funnily enough yeah, you do know. Tray Bake - chocolate toffee fingers

Chocolate Toffee Stuff/fingers. Aka millionaire's shortbread. With photos :) And yes i know its not Wednesday but I didn't want another tag :) Ingredients: base 8oz marg 2oz sugar 10oz flour caramel 8oz marg 1 lge tin condensed milk 2 tbsp syrup 4oz sugar topping 1 large pkt cooking choc Base cream marg and sugar. Add flour spread evenly over base of lined tin bake 5 mins gas 4/180C/350F then bake further 20 mins gas 3/160C/325F Cool in the tin Caramel melt marg add milk, sugar and syrup bring to boil boil 5 mins stirring all the time BURNS EASILY Pour over cooled shortbread cool in the tin Topping melt choc as per instructions on packet pour over COLD caramel Cool in the tin The end product :) made in response to the pink whisk challenge Nov 2011

Did I mention I have another book coming out? Probably. Anyway there's a page in there for reviews. Now cos Season isn't out for another 22 days, I didn't have one, so I sent in a copy to the ppl I review for and got one done. It made me smile. Really wasn't expecting anything like that. If you want to read it its HERE Still waiting on cover and release date for the new book, but the line edits are done and sent back. Muse has gone on strike. I blame the lack of cookies in the house myself. So how about peppermint creams instead? Now don't groan. Its a tenuous link, but like I said muse on strike means no fancy words or clever thoughts. You'll need 400g of icing sugar, some good dark chocolate, approximately 3 tsps of peppermint essence (you can add more or less, depending on how pepperminty you like them) and around 2 tbsps of water. Start by getting the kids to thoroughly wash their hands - very important, as there's a lot of hands-on squishing and rolling...

Curry recipie

oh look at the date - 08/09/10 Well I've had no feedback on this at all, so this will probably be the last one I post. Can't say I haven't tried. Actually tired of trying now. Curry 500g cubed meat - lamb, beef and chicken all work well 2 tbsp oil 1 onion 1 garlic clove crushed 2 celery sticks 1 apple 1 tbsp flour 2-3 tsp curry powder ½ tsp tumeric ½ tsp cumin ½ pt water + 2 relevant oxos ;-) 1 tsp tomato puree 1 tsp lemon juice 1 tbsp mango chutney salt and petter 1 tbsp coconut to garnish heat oven gas 3/170F/325C brown meat in large pan - i use a wok add onion, garlic, celery, apple and cook til onion is soft add flour, curry powder, tumeric and cumin. cook 2 mins stirring all time add stock, tomato puree, lemon juice, chutney and seasoning. Stir and bring to boil. put into casserole dish. cover and cook for 1½ hours. Serve with rice and sprinkled coconut. nb my lot don't like garlic or celery so i leave those out. quite often i chuck in sweetcorn or pototo and carro...

Lasagne recipie

In honour of oldest son's 16th bday, I bring you one of his fave dinners - home made lasagne. Spelt the English way lol. Really need to get my charries to eat something different cos it doesn't look right ending in an A but oh well. So onto the recipe. Prep time about 25 mins. Cooking time 90mins. Meat Sauce pkt mince tin chopped tomatoes or dollop of tomato puree 2 oxos/stock cubes mixed herbs lasagne sheets - don't need pre soaking with this recipe Cheese sauce 1½ oz cornflour (three tablespoons) 1½ pt milk as much cheese as you like :) fry mince til brown add tomatoes, oxos, mixed herbs and stir. add boiling water, enough to cover meat and cook til all water is absorbed. make white sauce with just cornflour and milk. Trust me it works. put cornflour in saucepan and add milk. Stir over heat until sauce boils. Add salt and pepper and cheese. Put a spoonful of sauce on bottom of dish. Layer it up lasagne sheets half meat third sauce lasagne sheets remaining meat half remai...

Recipe Wednesday

Well here's the only response I got. So either I use all mine or this is a very short lived set of posts. This one supplied by Ru, my sister :) Cacciatore microwave recipe 4x chicken breasts 4tbsp flour Salt and freshly ground pepper 50g butter 1tbsp oil Large chopped onion 1 crushed garlic clove Tin chopped tomatoes 1 tsp sugar 150 ml chicken stock 100g sliced mushrooms Cooked pasta to serve 1. Toss chicken in seasoned flour. 2. Arrange floured chicken in a casserole. Put aside. 3. Cook butter, oil, onion and garlic covered for five minutes. 4. Add tomatoes, sugar and boiling stock. Cover and cook for five minutes. 5. Pour sauce over chicken. Cover and cook on medium for 20 minutes rearranging chicken half way through. 6. Add mushrooms. Cover and cook on medium for five minutes. 7. Serve with pasta.
